Hello and welcome to my very first Big Bake-Off post. The Big ‘Saved by Cake’ Bake-Off was inspired by and is in fact my re-interpretation of Mama J’s challenge at Mama J Hearts Chick Lit.
I received my copy of the lovely Marian Keyes’ newest book, Saved by Cake in May and have been experimenting with her recipes ever since. Since I’m a huge fan of cakes and…well, everything that involves sugar, I thought it would be a great idea to change things up a bit with this new feature and treat you (and myself) to some lovely biscuits and cakes.
Just like Mama J, I challenged myself (it’s not really a challenge since I get to eat the cakes) to bake at least one cake or biscuit from Marian’s book each month. I will showcase the different cupcakes and goodies along with some pictures as frequently as I can. Mind you, I’m not a pro at baking, I’m far from it. I’m just a beginner but baking is fun and cakes are delicious, so here we go!
Sweet & Simple Strawberry Cupcakes
These strawberry cupcakes caught my attention right away. I was flicking through the book one day, trying to decide which cake I should start with and these cupcakes seemed to be the easiest. And indeed, they are very easy to make! All you need basically is just the basic eggs-flour-sugar combo and voilà.
It’s definitely one of those cakes that you just can’t go wrong with AND it only takes about 40 minutes to make it. (including the 30-minute baking time) I’ve tried them a few times since I got the book and they’ve always been a huge success. I used a bit more strawberries the second time (about 230g instead of 200) and I preferred them that way because it was a bit more fruity. But I think it’s totally up to personal taste, really.
Apart from the amount of strawberries I used, all I changed was the icing. You can put icing and some sort of a decoration on top of your cupcakes if you feel like it but it’s not necessary. I personally left them the way they came out of the oven – and the best thing is: they are still delicious. I’ll probably try them with icing as soon as I find a proper pastry bag but even if you’re in the same boat as me, there’s no need to worry: they’re perfectly all right without any extra decoration. 🙂

But what happens if you don’t have any strawberries left?
(a.k.a. you’re so obsessed with strawberry cupcakes that you just can’t stop…believe me, it does happen)
Try an alternative. I ran out of strawberries last week and had no choice but to use preserved cherries instead. I was quite sceptical at first but it actually works! It will be different from the strawberry ones, obviously, but it’s a great alternative if you don’t have anything else left. It’ll be a bit sweeter and less fruity I think, but other than that, it’s still delicious. You can serve them with a cherry on top or some icing, if you like. 🙂
